Now I know that cookie dough balls are not anything new in the blogging world, but for some reason while I always had the intention of making a raw cookie dough ball recipe it wasn’t until this past summer that I actually did so and boy can I tell you that they are DELICIOUS. Since I removed refined sugar from my diet I honestly haven’t been doing all that much baking and with the summer heat in full swing there was no way I was going to start attempting new gluten free, sugar free, vegan baked good recipes that would require me to turn on my oven in my very small apartment kitchen. However, since I do like a cookie now and then, and eventually was getting tired of just eating fruit, I knew I needed to come up with a cookie inspired recipe that would 1.) Not require me to turn on my oven, 2.) Be refined sugar free, gluten free, and vegan, and 3.) Would leave me somewhat satisfied.
I am the type of person who could and would eat 10 fluffy cookies if they were set in front of me so on average I like to try and develop my dessert recipes in a way that leaves you feeling satisfied after just one serving. These raw cookie dough balls are perfect for satisfying snack, they are relatively low in sugar, high in protein, and are overall just freaking delicious. Hope you enjoy!
Ingredients for MY Raw Vegan Cookie Dough Balls Recipe
♥ 2 Cups Gluten-Free Oat Flour
♥ 1/2 Cup Almond Butter (the runnier the better)
♥ 2 TB of Coconut Oil
♥ 1/2 Bag of Mini Chocolate Chips
♥ 1/2 Cup Honey/Maple Syrup
♥ 1 Tsp Vanilla Extract
♥ 1 Tsp Salt
1. Combine almond butter, coconut oil, honey/maple syrup, vanilla extract in a medium sized bowl. Stir together until completely mixed.
2. Add gluten-free oat flour and salt to wet mixture.
3. Lastly add mini-chocolate chips, sometimes it is easier to use your hands to mix chocolate chips into the mixture.
4. Roll mixture into mini round balls, place in freezer and freeze for a least one hour before serving. Store in the freezer.
